Pull up a chair. This one is soft.

It starts savoury, a little like broth. Then a sweetness that reminds us of cut grass. Then something creamy that stays a while. It is the bowl you make when you have ten minutes and nowhere to be, so sit down for it.

Questions

About this one

Do I need a whisk?

A bamboo whisk (chasen) gives the finest foam, but a small milk frother or a lidded jar you can shake will get you most of the way there.

How hot should the water be?

We suggest starting around 70 to 80 °C, so a little off the boil. Treat it as a starting point and adjust to taste.

Can I make a latte with it?

Of course. Whisk it with a splash of water first so it is smooth, then add warm or cold milk.

How do I store it?

Keep the bag sealed, cool and out of the light. The fridge is fine once opened; let it come to room temperature before you open it so it stays dry.
