A morning, slowed down
Let it come off the boil. Matcha likes it a little cooler, coffee just under.
Matcha: 2 g, sifted. Coffee: 20 g, medium grind. Suggestions, adjust to taste.
Three slow pours for the coffee. A quick W from the wrist for the matcha.
Actually sit. Phone face down. Let it cool for a minute.
It tastes more like itself on the second sip, which is sort of the whole idea.

Keeping it

Matcha
Keep the bag sealed, cool and out of the light. The fridge is fine once opened; let it come to room temperature before you open it so it stays dry.

Coffee
Sealed, cool and dark. Skip the fridge for coffee: it picks up moisture and smells. A 340 g bag is roughly two to three weeks for one person, one cup a day.
We would rather leave this shelf empty than fill it with made-up praise. Once the first bags have shipped, customers will be able to tell you what they actually tasted, and we will show it as written.
Because we would rather do two things slowly than twenty in a hurry. One matcha, one coffee, and a bundle of both.
If you want bright and floral, the Yirgacheffe. If you want soft and savoury, the matcha. If you cannot decide, The Second Pair is one of each.
Choose what, how often and (for coffee) your grind. Subscriptions save 15% and you can pause, skip or cancel whenever you like. Subscriptions switch on when the shop opens.
